It will only take 20 minutes to prepare this spectacular cebiche of pippin and shrimp for ten people. If you have guests you will be like a queen, go ahead and prepare it.
Ingredients:
- 1 kilo of filleted pippin
- 500g of boiled and peeled shrimp
- 2 small purple onions
- 10 pica lemons (their juice) )
- 1/3 cup olive oil
- 1 1/2 cup fresh chopped cilantro
- 1/2 green chopped chili pepper
- 1 clove garlic, chopped or 1/2 teaspoon garlic powder
- Salt
- Ground black pepper
Preparation:
- Chop fish in 2 -3 cm cubes.
- Collect this minced fish with the shrimp. Reserve
- Chop the onion in a very thin pen. Cushion the onion by adding a handful of salt and let it rest for 15 minutes. Then, put hot water without boiling on the onion and leave for 5 minutes. Strain and with the water running, crush the onion with your hands. Drain completely.
- For the seasoning mix the lemon with the oil, the onion, the cilantro, the chili, the garlic, the salt and the pepper to taste.
- Mix the fish and shrimp with the dressing no more than 30 minutes before serving.
