500 gr. chicken cut without skin or fat

150 gr. of carrots

150 gr. of green peas

1 large tomato red

1 red or green pepper

1 onion

2-3 garlic and fresh parsley

1 liter of chicken stock

2 tablespoons fried tomato

Cherry tomatoes for decoration

Ground black pepper

Vegetable broth

Virgin olive oil

Salt

Preparation:

Peel and cut the carrots into thin slices ( or use baby carrots). Peel and finely chop the onion. Cut the pepper into strips. Peel and slice the garlic. Cut the tomatoes into slices and then into small cubes.

In a paellera or frying pan, add three tablespoons of olive oil, put on the fire and when hot, toss the diced chicken, with a little salt and pepper and fry over medium heat. Then add the pepper, onion and garlic and fry over low heat. When the pepper is soft and the onion is transparent, add the tomato, stirring frequently.

When all the tender vegetables are done, add the rice and stir.
